Food and eating system in Horaman region has a cultural, social, religious and religious role tailored on mythological and aesthetic identities in a dual system and opposite interaction. This article has investigated the characteristics and place of food in the cultural structure of Horaman region with the approach of anthropological structure based on qualitative study and field work, participatory observation, open interviews, library ethnographic method and the use of food anthropology resources in Horaman region. The results of the research show that food, in addition to physical needs, has a structure that is part of the cultural structures of Horaman region and has an anthropological application, As it has a constructive role in the rules, principles and values governing the cultural system of Horaman region and it forms part of the national and religious beliefs and cultural and social values and rituals of this region. <span dir="RTL" lang="FA" style="font-size: 10.0pt; mso-ascii-font-family: 'Times New Roman'; mso-fareast-font-family: 'Times New Roman'; mso-hansi-font-family: 'Times New Roman'; mso-ansi-language: EN-US; mso-fareast-language: EN-US; mso-bidi-language: FA;">نظام خوراکی، پخت‌وپز و شیوه‌های مصرف خوراک، افزون بر نیاز زیستی بر روابط خویشاوندی، فرهنگی و اجتماعی، باورهای ملی و دینی، اسطوره‌شناختی و زیبایی‌شناختی استوار است؛ بنابر این،<span dir="RTL" lang="FA" style="font-size: 10.0pt; font-family: 'B Nazanin'; mso-ascii-font-family: 'Times New Roman'; mso-fareast-font-family: 'Times New Roman'; mso-hansi-font-family: 'Times New Roman'; color: black; mso-ansi-language: EN-US; mso-fareast-language: EN-US; mso-bidi-language: FA;"> ساختار فرهنگی نظام خوراکی، باورها و آیین‌های آن، کاربردی دوگانه و رویکردی تقابلی دارد که برخاسته از کارکردهای ساختار فرهنگی و روابط اجتماعی است و در ساختارهای تقابل طبیعت و فرهنگ، کوچ‌نشینی و یکجانشینی، خام و پخته، مرد و زن، غلات و روغن، نان و گوشت خودنمایی می‌کند. خوراک و نظام ‌خوراکی در منطقۀ هورامان، نقش‌مایة فرهنگی، اجتماعی، آئینی و باورمندانه در سویه‌های هویّت دینی و ملی، اسطوره‌شناختی و زیبایی‌شناختی در یک نظام دوگانه و تعامل تقابلی دارد. این مقاله ویژگی‌ها و جایگاه خوراک را در ساختار فرهنگی منطقۀ هورامان با رویکرد ساختار انسان‌شناختی مبتنی بر مطالعۀ کیفی و کار میدانی، مشاهدۀ مشارکتی، مصاحبه‌های باز، روش‌ مردم‌نگاری کتابخانه‌ای و استفاده از منابع انسان‌شناسی خوراک در منطقۀ هورامان بررسی کرده‌است. دستاورد پژوهش نشان می‌دهد، خوراک افزون بر نیاز جسمانی، ساختاری دارد که بخشی از سازه‌های فرهنگی منطقة هورامان است و کاربردی مردم‌شناختی دارد؛ چنانکه نقشی سازنده در قواعد، اصول و ارز‌ش‌های حاکم بر نظام فرهنگی منطقة هورامان دارد و بخشی از باورهای ملی و دینی و ارزش‌ها و آیین‌های فرهنگی و اجتماعی این منطقه را می‌سازد.
